Remember if you're using Junket Rennet, you need to use at least one WHOLE tablet. We used 1 1/2 in the class.
Ricotta (from Epicurious)
Remember you can use a cotton handkerchief instead of cheese cloth. I think it actually works better! This is actually a lot easier then making mozzarella, and would be a nice place to start.
Marscapone (from All Day I Dream of Food)
We didn't talk about this one in the class, but similar idea.

Eggless Pasta (from Mario Batali)
Remember the inverted bowl on the counter works just as well as plastic wrap. And if you're in a hurry don't worry about the resting.
